What is a SCOBY?

A SCOBY is a symbiotic culture of bacteria and yeasts used to ferment sweetened tea into probiotic kombucha. The SCOBY is a cellulose mat made up of bacteria and yeasts which are imperative to the fermentation of kombucha. Read our blog to find out more about what is a Kombucha SCOBY and the benefits.

How do I make kombucha with a SCOBY?

One needs to have a SCOBY in order to ferment your kombucha. You simply dissolve sugar into tea, cool it to room temperature, and add your SCOBY. Wait a few days and you will now have kombucha that you can flavour according to your desired taste. All instructions are provided with your purchase to start fermenting 1L of kombucha and increased volumes. Read our blog about how to make Kombucha at home.

When receiving your SCOBY, you either need to ferment it within a few days of receiving it, or place it in the fridge for up to 10 days if you are not going to ferment it right away.

Everything you need to make Kombucha:

• A Healthy SCOBY
• Sugar
• Unchlorinated/filtered water
• Black, white or green tea
• An elasticated small cotton top or a larger top
• Glass fermentation jar

Alternatively, we provide a complete Kombucha Kit which includes everything you need. All you need to do is add water!
